Frozen Green Beans with Peanuts

This is a great quick side dish and can be served with poli. I used frozen French style cut green beans as I had a left over bag from Thanksgiving. You can use fresh beans. The addition of peanuts is a classic Maharastrian touch.

You will need
1 (16oz) bag frozen French style cut green beans (or use fresh beans)
1/2 cup ground dry roasted peanuts
1 tsp. mustard seeds
1/2 tsp. asafetida
1 tsp. turmeric powder
1 tsp. chili powder
1 tsp. sugar
salt to taste
olive oil

Thaw the green beans for an hour by leaving the bag on the kitchen counter. Do not wash the beans as they lose their crunch. Heat 1 tbsp. oil in a pan and add mustard seeds. When the seeds crackle add the asafetida and turmeric powder. Then add the thawed beans. Let them cook until almost done. Add the peanut powder, salt, sugar and chili powder.

Mix well and cook another few minutes. Serve hot.
