Tikki with leftover Rice

I had some leftover rice that I wanted to use. Google did not provide any appetizing results so here is my experiment.

You will need
1.5 cups leftover rice (I used brown rice)
1/2 cup rice flour
1/2 onion diced
1/2cup cilantro diced
1 tbsp. lime juice
1 tsp. chili powder
1 tsp. Madhava nectar
1 tsp. cumin seeds
salt to taste

Mash the rice as best as you can.

Add the onion, cilantro and rice flour. With a little sprinkle of water knead rice.

Add the rest of the ingredients.

Knead well. Let it rest for 30 minutes.

Heat a griddle on medium heat. Add a few drops of oil and spread it around the griddle.
Divide the rice mixture in lemon sized balls. Take a ball and flatten it on the palm of your hand to form a tikki. Place it on the hot griddle. Prepare and place another tikki on the griddle.

Add a little more oil around each tikki. Cover and cook the tikki.

Turn over when brown and cook on other side. Remove from heat when both sides are brown. Repeat process for all the tikki.

Serve hot with green coriander chutney, mango pickle or ketchup.
