Potato Tikki

Today I happened to have two thirds of a boiled Russell potato left over and decided to make tikki's. Potato tikki can be eaten as a snack by itself or can be added to other preparations like radga patties.

You will need
Boiled Potato
a bunch cilantro, chopped
1 tsp. cumin coriander powder
1/2 tsp. turmeric powder
1 serrano pepper, deseeded and minced or 1 tsp. Sriracha hot sauce
1 tsp. Madhava agave nectar or 1 tsp. sugar
salt to taste
olive oil

Peel and mash the boiled potato. Add all the other ingredients except oil.

Do not knead or the potato will get sticky. Divide into lemon sized balls.

Heat a pan and add a few drops of olive oil. Flatten a lemon sized ball on the palm of your hand and place in the pan. Repeat for the other tikki. Let it brown on one side. Turn over and brown on the other side.

Take off heat and serve hot.
