Simple Dal

Everyday I expect everyone in the family to eat a small bowl of toor dal. The benefits of dal in a vegetarian diet are tremendous. It is the base protein in the meal and it helps keep the bad cholesterol in check. I use a bunch of recipes on rotation and this is the simplest of them all.

You will need
1 cup toor dal
1 tsp. mustard seeds
1 tsp. cumin seeds
1 tsp. turmeric powder
1/2 tsp. asafetida
salt to taste
olive oil

Wash the toor dal. Put the dal in a pressure cooker pan and add 2 cups of water.

Pressure cook the dal. In some pressure cookers you let the steam rise, place the pressure and leave it on high for 10 minutes. Turn off the heat and let the pressure go down. Alternately, keep the pressure on for 3 whistles.

Mix the cooked dal with a ladle. Heat oil in a sauté pan and add mustard oil. Once the seeds crackle add the cumin seeds, asafetida and turmeric powder. Add the cooked dal and turn up the heat. Stir occasionally to keep the dal from sticking to the bottom. Add the salt and let the dal simmer for a few minutes. Serve hot.
