Pita Pizza

This is a go to recipe in my house when I need something in a pinch. We just got home today from a two day trip. I had pita bread in the refrigerator as well as the other ingredients.

You will need
For each pizza
1 pita bread with or without pockets
a bunch of spinach leaves
a handful of cherry tomatoes or 1 medium tomato
a handful of cheese

Preheat the oven to 375 F. Wash the spinach and cut it into thin ribbons. Wash the tomatoes and slice it.

On a baking sheet place the pita bread and heat in the oven for 3-4 minutes.

Take the sheet out of the oven and load the pizza. Put the spinach as a base covering the surface of the pita. Cover it with the tomato.

Grate cheese over the top.

Bake in the oven for about 10 minutes or until the cheese is completely melted.

Serve hot.
