Microwave Candied Lemon Peel

Candied lemon peel is a delicious topping over lemony desserts. It can also be eaten on its own. It has a lemony tart-sweet taste that is oh-so delicious.


You will need
Peel of a lemon
4 tbsp. sugar

Peel the lemon and ensure you do not dig into the white interior. Julienne the peel. In a microwavable bowl add 1/2 a cup of water and the cut peel. Bring it to a boil in the microwave - about 40 secs.


Let it rest 30 seconds and pour the liquid through a sieve. Discard the water. Add another 1/2 cup of water and the once boiled peel to the cup and microwave again for 40 secs or until the water boils. Pour it through a sieve and discard the water.


Now add 1/4 cup water and 1/4 cup sugar to the cup and bring it to a boil in the microwave - about a minute.


Add the peel to it and microwave for 30 seconds. Take it out stir and put it back for 30 seconds. Repeat 3 more times or until the peel is translucent and the syrup has thickened a little.


Pour through a sieve but this time save the lemon syrup for another recipe. Place the lemon peel on a flat surface to dry for an hour.


Roll it in a little sugar and you have candied lemon peel.


Use as needed.
