Miller Genuine Draft Beer Cupcakes

The theme for week 21 of the 2014 52 week challenge is beer. This was a difficult challenge for me as I don't drink beer. As luck would have it there was beer in the refrigerator bought for dinner guests we had over last weekend.

I decided to make cupcakes using beer. I cut the recipe to a fourth and got 6 cupcakes.

You will need
For the cupcake
1/2 cup sugar
1/4 cup butter
1 egg
1/4 tsp. vanilla extract
1/4 tsp. baking soda
1/4 tsp. salt
3 oz. beer
1 cup all purpose flour

For the glaze
4 tbsp. butter
1/2 cup powdered sugar
1 tbsp. milk

Preheat oven to 350 F. Prepare a 6 muffin pan lining it with paper muffin cups. In a mixing bowl beat the softened butter and sugar until creamy. Add the egg and beat some more. Add the vanilla extract and beer and mix together. Fold in sifted flour, salt and baking soda. Fill the cups 3/4 of the way.

Bake for 20-25 minutes or a tester comes out clean. Let it cool completely.

Mix all the ingredients for the glaze and cover the top.
