Cheesy Buns

As the name suggests these buns have a gooey cheesy center. I made these for my daughter who was recovering from a minor accident. The pain killers left her with little appetite or taste and these cheesy buns helped as only something cheesy can do.

You will need for 8 small buns
2 tbsp. melted butter
425 gm (1 1/2 cup) all purpose flour
1 tsp. salt
1 tbsp. yeast
1 tbsp. sugar
2 tbsp. olive oil
1/2 cup warm water

8 chunks of mozzarella
1 tbsp. dried basil
1 tbsp. paprika
2-3 tbsp. shredded cheddar

In a mixing bowl melt the butter. Add the yeast, sugar and oil. Sift in the flour and salt. Add warm water. Combine to form a ball of dough. Knead well for 10 minutes until the sticky dough becomes soft and elastic. Cover and keep aside for an hour or two.

Preheat oven to 375 F. The dough should have at least doubled in size. Transfer the dough to a floured board and divide into 8 portions.

Flatten each portion and place one portion of cheese in the center along with a pinch of basil and paprika. Close the top and shape into a bun. Place on a baking sheet covered with parchment paper. Repeat for all portions of dough.

Cover the top with shredded cheese. Bake for 15-20 minutes or until the top is beginning to brown.
