Holi or the festival of colors is a harvest festival celebrated during spring. People play with colors to acknowledge the colorful spring landscape. Food is always a big part of this holiday.
Chipotle is a fast food restaurant with flavors close to the Mexican cuisine. A little of this and a little of that from their lined up stations adds up to a very flavorful bowl or burrito. My daughter is a big fan of Chipotle. She never gets tired of it. Chipotle is always her choice whether it is to celebrate the beginning of school holidays, the end of the holidays, on a trip or any other time. Several years back I tried to make a copycat Chipotle meal at home. Back then I was stumped with the black bean recipe. Since then I have managed to replicate the taste of everything we like from Chipotle. I especially love the tomatillo salsa. Though my daughter would rather go to Chipotle she has to agree this is close. The veggie burrito/bowl we like consists of the following added in this order Lime rice, Black Beans, Pico de galo, Tomatillo Salsa, Corn Salsa, Guacamole, Sour Cream, Grated Cheese and Lettuce. Chocolate glaze is used to decorate cakes and pastries. It is very easy to make. Most recipes use corn syrup but it is not really needed to make good chocolate glaze. You will need 1 1/2 tbsp. milk 1 tbsp. Agave nectar or honey 2 tbsp. butter a handful of semisweet chocolate chips 1 tsp. vanilla Combine all the ingredients in a microwaveable bowl and heat for 10 seconds. Stir and put it back for 10 seconds. Repeat until the chocolate chips and butter are completely melted. Keep aside and let it cool. It will thicken a little. Use as needed.
Bread made to look like a sheaf of wheat is a classic way to celebrate fall. I wanted to try my hand at making this traditional fall harvest bread. I added a mouse under the tie when I found that it is customary to add a mouse to the sheaf. I think is reason behind it is rather interesting. The mouse seeks shelter in the fields, when harvested the shelter is destroyed so the mouse is brought home with the sheaf. I love fall. I love the beautiful colors, the cooler temperatures and the holiday season starting with Ganesh Chaturthi, Dasara, Diwali and finally Thanksgiving. Today I am posting my version of the fall harvest bread. I looked at pictures online and created this piece entirely on my own.
