Tricolor Pasta Salad with Tomatoes, Spinach and Mozzarella

A simple pasta salad that comes together very quickly. Great for warm summer days.

You will need
1 cup tricolor penne pasta
a handful spinach leaves
1 small ball fresh mozzarella
a handful cherry tomatoes
1 tsp. lime juice
1 tbsp. olive oil
salt and pepper

Cook the pasta according to package instructions. Drain, wash in cold water and keep aside.

Cut the cherry tomatoes into quarters, chiffonade the spinach and dice the mozzarella. In a bowl add the drained pasta, tomatoes, spinach and mozzarella.

Squeeze lime juice, add olive oil and black pepper. Season with salt and serve.
