Spinach Paratha (Palak Paratha / Paalak Paratha)

This is a standby recipe in my house. It is simple, tasty and filling. It is great as packed lunch when combined with good quality cheddar cheese.

You will need
2 cups whole wheat flour
1/2 cup besan (chickpea flour)
1.5 cups spinach, chopped
1/2 cup yogurt
1 tsp. cumin
1 tsp. carom seeds
1 tsp. turmeric
1 tsp. chili powder
1 tsp. Madhava Agave Nectar
Salt to taste
Olive oil

In a bowl add all the ingredients except oil.

Mix into dough using water. With a little oil on the palm of your hand knead the dough until smooth. Let it rest for a few minutes.

Divide the dough into lemon sized balls. Keep a little wheat flour handy to be used while rolling out the parathas.

Roll out the ball of dough about 4 inches in diameter. Apply oil on one half and fold over. Apply oil again and fold over. You will have a triangular shape. Apply wheat flour to keep dry and roll it out to desired size. I like to roll it back into a circle. Heat a pan and add a few drops of oil. Place the rolled out paratha on the pan. Cook of both sides until brown.
