This is a standby recipe in my house. It is simple, tasty and filling. It is great as packed lunch when combined with a vegetable side or pickle.
2 cups whole wheat flour
1/2 cup besan (chickpea flour)
1.5 cups spinach, chopped
1 tsp. cumin
1 tsp. carom seeds
1 tsp. turmeric
1 tsp. chili powder
1 tsp. maple syrup (optional)
Salt to taste
Olive oil
In a bowl add all the ingredients except oil.
Mix into dough using water. With a little oil on the palm of your hand knead the dough until smooth. Let it rest for a few minutes.
Divide the dough into lemon sized balls. Keep a little wheat flour handy to be used while rolling out the parathas.
Roll out the ball of dough into a circle about 7-8inches in diameter or a little less than 1/4inch thickness. Heat a griddle pan. Place the paratha on the pan and cook one side. When done flip it over and cook the other side.
Enjoy with pickle.
